Artichokes

We like artichokes. I found these beauties for a dollar a piece yesterday and couldn't resist. They were large and just about perfect.
You slice the stem off of the bottom and cut off about an inch of the top. Then with kitchen scissors, you cut the thorny tops of of each outside leaf. Put them in a large pot, like a dutch oven or soup pot. Cover with water and add some cloves of garlic if you like. Bring pot to a boil and boil for about 1/2 an hour, until some of the lower leaves fall off.
This is what they look like when they are done. Lovely, lovely, lovely. Serve with lots of melted butter and salt. Dip each leaf in the butter and scrape the fleshy part of the artichoke off with your teeth. When you get down to the center, use a spoon to remove the prickly "choke"and throw it out. Do not try to eat it, you will be miserable. (this is said from personal experience) Then dig in to the very best part of the artichoke - the heart. Oh my. Oh my my.

Thank goodness for spring and reasonable prices on such treats. Artichokes and avocados make me wish we lived in California where they are grown, but I'll have to settle for having one once in a while and enjoying them thoroughly. Delicious.

No, I never have. We are sort of food "purists" although I think I'd like stuffed artichokes. How do you do it and what do you stuff them with?

It's one of those things old Italian grandmother's make. You stuff them between the leaves with a combo of Italian breadcrumbs, cheese, onions, seasonings and olive oil. They are a real pain to make (not that I ever have). I'll send you a recipe for a casserole that tastes just about same and is a LOT less trouble.

I don't have an old Italian Grandmother, so I guess that explains it! : ) It sounds wonderful to me, but your casserole sounds much easier. I'd love to have a copy of the recipe. Thank you.

$1?? What a deal. We love them here. Not had garlic with them, I will have to try that. I usually use the steamer to cook them. Had stuffed before, yum! But let someone else do the work. We eat most of our veggies plain, guess you could call us purists too.
